The ‘Surò’ Susumaniello del Salento Leone De Castris Rosato is made from only Susumaniello grapes sourced from vines with an average age of 15 years, grown in medium-textured soils in the Salento area. Harvesting usually takes place in the first decade of September, with the bunches that, after a gentle crushing and destemming, undergo a short skin maceration of a few hours, carried out at a temperature between 8 and 10 °C. Following this, the operations of draining and decanting for 24 hours occur before the alcoholic fermentation of the must in temperature-controlled stainless steel tanks, lasting about 20 days.
