
Sylvaner Abbazia di Novacella 2025
The Sylvaner from the Abbey of Novacella is a typical white wine from South Tyrol with a fresh and fragrant profile. The aromatic spectrum is certainly mountainous and fragrant, where herbaceous and vegetal notes dominate the scene. It presents itself on the palate as juicy, gentle, slightly soft, with pleasant acidity and simple structure.
The Sylvaner from Abbazia di Novacella is born in a spectacular context, that of an abbey of the Augustinian Order, founded by Blessed Artmann in 1142. Located a few kilometers from Bressanone in Trentino Alto Adige, it now presents itself as an active center aimed at education and cultural training. Since the year of its foundation, the lands around the Abbey have been dedicated to viticulture, recognized even by Pope Alexander III as an invaluable source of products of excellent quality. After the secularization of the early nineteenth century, the monastery lost some land holdings, but from then until today, local farmers have been accustomed to delivering part of the grapes grown to the Abbey, so that they can be transformed into excellent wines.
The vineyards of the Sylvaner from Abbazia di Novacella are located between 650 and 750 meters above sea level in the Bressanone basin. The soil is mainly composed of morainic deposits with mica schist, paragneiss, and quartzite for wines with a lively and structured character. The climate is cool and harsh in winter, with snowfall and cold winds also at the beginning of the spring period; in summer, heat and humidity are felt, but the harvest still reaches good ripeness thanks to the warm rays of the sun. The grape harvest is done manually and in the winery, 3/4 of the must ferments in steel and also ages here for a few months; the remaining 1/4 rests in oak barrels. A final aging of 6 months occurs with all the must in steel.
The color of the Sylvaner from Abbazia di Novacella is a straw yellow with greenish reflections; the bouquet of aromas is broad and recalls summer wildflowers, alfalfa, and hints of ripe white-fleshed fruit such as pear and white melon. On the palate, it is rich, enveloping, and elegant with an overall balance also given by the final freshness that invites drinking. It pairs excellently with canederli and stuffed pasta with spinach, asparagus salad, shellfish, and mollusks.
