ArtisanalThis Syrah by Hervé Souhaut is an artisanal red that tells the story of a prestigious territory, that of the banks of the Doux River, a tributary of the Rhône. Here, Hervé cultivates old vines on granite soils following a minimalist philosophy, both in the vineyard and in the cellar. The grapes undergo semi-carbonic maceration to enhance the fruit, and mature in old barrels. On the nose, juicy red and black fruits such as cherry and plum are perceived, with notes of candied violet and pleasant meaty and smoky tones on the finish. Hervé Souhaut's Syrah is an artisanal red wine with anauthentic and genuine identity, reflecting the personality of its maker. We are in the small commune of Arlebosc, on the northern slopes of the Ardèche region, where vigneron Hervé Souhaut, a biologist by training, settled to start his small artisanal business in 1993. The winery, which takes the name Domaine Romaneaux-Destezet, is located below the 16th century fortified farm 'Les Romaneaux'. From the beginning of his project, Hervé is supported by his wife Béatrice, with whom he shares a love for the world of artisanal wine.
Hervé Souhaut Syrah represents an expression of the black berry variety of the same name from vines of an average age of 40 years planted on granite soils along the banks of the Doux River, a tributary of the Rhone. Harvesting is usually carried out by hand towards the end of September, with the bunches then placed whole in oak vats for spontaneous alcoholic fermentation, combined with prolonged semi-carbonic maceration at a low temperature. The mass is then racked into second-passage oak casks for the 6-8 month ageing that precedes the final bottling, carried out without prior clarification or filtration and with the addition of very low doses of sulphur dioxide only when the wine requires it.
To the eye, vigneron Hervé Souhaut's Syrah expresses a dark ruby red colour. The nose reveals seductive aromas of strawberry, morello cherry, plum, candied violet and olive paste, overlaid with hints of spice and fleshy notes. The palate stands out for its crisp freshness and moderate, subtle tannins, elements underlying the fine agility of this Syrah, characterised by a juicy, intensely fruity finish.
