Organic and biodynamicThe Red 'The Summit' of Silver Heights is the flagship red wine of the most prominent biodynamic winery in China. it is the standard-bearer of this philosophy in a region extremely suited to viticulture, northern Ningxia. The name refers to the summit of Mount Helan, overlooking the winery's vineyards that stand at about 1200 meters above sea level. It is a robust wine, very tannic, sapid, concentrated. The glass releases enchanting and complex aromas of black fruits, tertiary hints of chocolate and pleasant hints reminiscent of grilled meat. The Red 'The Summit' by Silver Heights is a wine produced by the Gao family, who since 2007 have been working and producing wine with awareness and respect for the ecosystem surrounding their vineyards. The landscape where this wine is born is characterized by the presence of the high Helan Mountains, which reach about 1200 meters above sea level, giving excellent taste expression to the grapes. Gao Lin and his daughter Gao Yuan have absorbed all the knowledge of the art of winemaking by traveling in Europe and working for famous French Domaines, particularly in Bordeaux, where Yuan graduated in oenology. Upon returning home, they put into practice the teachings, giving life to aquality-focused activity that is attentive to environmental sustainability. Today, the activity is managed by Yuan in collaboration with her children Emma and Eddie, who are training in Europe and Australia to bring innovation to the family business.
The Cabernet Sauvignon grapes of the Red 'The Summit' by Silver Heights grow on sierozem, which is a soil composed of calcium carbonate and gravel, ideal for obtaining structured and elegant wines. For the cultivation of the vineyards, the principles of biodynamic agriculture are followed, adhering to the teachings of Rudolph Steiner: cow horns are filled with manure and buried in winter until the following spring; to activate the mixture, water is added and then it is vigorously stirred clockwise for an hour to simulate the vortex movement and make it active. The ecosystem surrounding the vineyards is preserved, and the final product is enriched by the presence of local flora and fauna that gives great taste and aroma. The grape harvest is manual, and in the cellar, a brief maceration takes place; subsequently, spontaneous fermentation occurs in steel. It ages 70% in French barriques and 30% in one-year-old barriques for 18 months.
