The Trento DOC Extra Brut “Perlé Nero” is the only Blanc de Noirs from the Ferrari winery, meaning it is the only sparkling wine produced exclusively from red grapes. For the Lunelli family, now the owners of this prestigious winery, the challenge has been precisely this: to translate the power and finesse of Pinot Nero into a Metodo Classico with the perfect Ferrari style. The chosen dosage is that of Extra Brut, so that the austerity of Pinot Nero is only slightly softened and its soul is left free to express itself at its best in terms of elegance and structure.

The Perlé Nero from Ferrari comes from the most careful selection of Pinot Nero grapes, hand-picked from the best owned vineyards located in the highest mountainous areas. As is the case with every Metodo Classico, the production consists of two phases. During the first, the base wine is made through a normal white winemaking of the grapes; the second phase is that of refermentation in the bottle. At the end of this, the sugar has transformedinto alcohol and carbon dioxide. During the resting period in the bottle, the yeasts break down, releasing aromas of bakery and pastry, typical of every Metodo Classico sparkling wine, and giving a unique complexity, always different. In this case, the sparkling wine rests on the yeasts in the bottle for at least 6 years.

The Perlé Nero Ferrari sparkling wine is a blend of an austere nature and a seductive character. To the eye, it presents a golden yellow color with a lively and brilliant perlage. Its aroma, enhanced by the movement of the bubbles inside the glass, diversifies into fruity and floral notes, mineral and toasted. On the palate, it is enveloping and silky, but perfectly balanced by freshness and sapidity and enlivened by the refined prickliness of carbon dioxide. The finish is precise and fine, well persistent. Due to the beautiful complexity of aromas and scents, it is difficult to detach from the glass, in a Magnum version perfect for sharing.
