"Umo" is a red wine of great expressiveness that matures in steel to maintain all the characteristics of the grape Nebbiolo, locally called Chiavennasca. Aromas of cherry, plum, aromatic herbs, and spicy hints spread from a fresh, precise, and slightly tannic structure. Perfect to drink with a traditional Valtellina dish of pizzoccheri.

"Umo" is a splendid testament to the magical union between Nebbiolo and Valtellina, truly the essence of the territory. A tiny patch of land, perched on the Rhaetian slope and cultivated with the utmost respect for the land by the skilled hands of Giuseppe Guglielmo, known as Beppe. This is, in summary, the farming reality of Boffalora, one of those that has contributed to the revival of Valtellinese artisanal wine, which for too long has been set aside in favor of impersonal and mass productions. Certainly, it is hard work to harvest among the terraces and the picturesque stone walls, but for Giuseppe, the choice was automatic and almost obvious, just as was the decision to respect the vineyard and to continue with spontaneous vinifications.

The wine "Umo" is the result of pure Nebbiolo grapes from vines of varying ages. Thousands of hours of work have allowed for the restoration of the stone walls, aimed at containing the expansion of the forest area adjacent to the vineyards. In the vineyard, no fertilizers are used, and the use of chemical products is almost nonexistent, except when strictly necessary. The harvest, given the conformation of the place, can only be "laboriously" manual with a careful selection of the best bunches. In the cellar, the process continues with a few simple gestures, vinifications that occur only through the intervention of indigenous yeasts and the aging that, in the case of Umo, takes place in steel to preserve its spectacular youthful exuberance.

Umo fills the glass with the typical color of Nebbiolo, namely a fascinating transparent garnet. A base wine that has very little base, immediately showcasing plum and earth, with a saline component that seems to be perceptible already on the nose. A picture of great freshness, jovial yet always composed, never vulgar. A sip driven by an impetuous freshness, wonderful synthesis of balsamic notes and citrus, surrounded by a perceptible matter that makes it elegant and complete. A daily wine of the heart, to be enjoyed with numerous gastronomic preparations including succulent roasts and first courses dressed with delicate sauces.
