Try it with fish dishes, from crudités to fritto misto!
The family-run winery Tombolini presents the Verdicchio dei Castelli di Jesi Classico Superiore ‘Doroverde’, a Verdicchio that impresses with finesse and balance. The name ‘Doroverde’ pays homage both to the Dori, a lineage from ancient Greece that founded the city of Ancona, and to the colors of the Jesi countryside and its varietal symbol: the Verdicchio. The label depicts a bird’s-eye view of the snow-covered village of Staffolo, home to the estate. All wines signed by Tombolini are marketed in an iconic long amphora-shaped bottle, in use for over 70 years.
Tombolini ‘Doroverde’ Verdicchio dei Castelli di Jesi Classico Superiore is produced exclusively with Verdicchio grapes grown on hilly soils, characterized by a strong clay component in the upper part that gives way to limestone as it descends the slope. The average altitude is 250 meters above sea level, the exposure is full east while the agronomic management refers to the principles of organic farming. The harvest is carried out entirely by hand generally during the third decade of September with careful selection of the bunches, which are then vinified whole through soft pressing and subsequent alcoholic fermentation of the must in temperature-controlled stainless steel tanks. The subsequent maturation phase always takes place in steel on the fine lees, with a small fraction of the mass finishing the aging in cement tanks.
The Verdicchio dei Castelli di Jesi Classico Superiore Tombolini ‘Doroverde’ is straw yellow with greenish reflections. The nose reveals precious aromas of bergamot, white flowers, and yellow-fleshed fruit, enriched by a balsamic background. Fresh and full-bodied the taste, with a solid savory mark and a balanced finish.
