The Vermentino "Aimone" is a light and fresh Ligurian white wine, with a bouquet of aromatic herbs like sage, rosemary, and thyme, and a finish with hints of cedar, with beautiful savoriness and persistence.

Vermentino "Aimone" Bio Vio is a wine of great freshness and good expression, the result of virtuous and sustainable practices in the vineyard and cellar. From a holistic production approach and a philosophy in line with organic criteria comes a Vermentino that fully represents, with its fresh and fragrant naturalness, the essence of the Ligurian land. The importance of this Vermentino within the range of wines proposed by Bio Vio is evident from the fact that it bears the nickname of the producer Giobatta Vio, known as "Aimone," who was always careful to produce grapes of excellent quality for all his wines.

Bio Vio "Aimone" is a pure Vermentino, whose grapes are harvested by hand in the vineyards of Bastia d'Albenga on the Ligurian Riviera di Ponente, a medieval estate dotted with crenellated walls, castles and ancient buildings, where vines now averaging 60 years of age have been planted. Harvesting takes place between mid-September and mid-October, depending on the vintage, which is followed by a 24-hour cryomaceration. The grapes are then pressed and then go into steel tanks where alcoholic fermentation begins. Ageing is for 4 months, followed by another 2 months in a bottle.

Vermentino "Aimone" Bio Vio Illuminates the glass with soft yellow and greenish reflections. It communicates on the nose faint notes of sage, apple, rosemary and cedar, scents that openly refer to the terroir of production, where the sea collides with the hills and where the vineyards extend side by side and are embraced by olive trees. The taste is dry and sharp, with a light structure and good sapidity. It fades rather slowly, like a dream, an enchantment, like a wave lapping the shore and then fading quickly, but in the meantime, it has produced foam and left its mark.
