Aviation is an American Gin brand founded in 2006 in Portland, Oregon, by Christian Krogstad and Ryan Magarian. The produced distillate is known as Aviation American Gin and is a dry gin with a classic and traditional taste. It takes its name from a classic cocktail called Aviation, created in 1916 by the famous bartender Hugo Ensslin. Today, it is made with a selection of botanicals chosen with particular care, to achieve a harmonious flavor and great taste balance. Among the herbs and spices used in the preparation, we remember: cardamom, coriander, French lavender, anise seeds, sarsaparilla, juniper, and two types of orange peel. The production process involves a long maceration period of at least 18 hours in pure grain alcohol, in order to extract all the scents and aromas.
At the end of the preparatory phase of maceration, distillation takes place, which occurs in a traditional still, according to the best practices. During processing, the utmost attention is paid to the cutting operations, that is, the discarding of the first vapors of distillation, the the head, and the final part of the process, taking care to preserve, solely and exclusively, the heart of the distillation: the purest, softest, and most intense part from an aromatic point of view. It is thanks to this particular attention that it is possible to obtain a Gin of refined purity, fragrant, soft, and characterized by the clear expressive finesse, which has always distinguished Gin Aviator, as a true hallmark.
During the last phase of Gin preparation, the high-proof distillate that comes out of the still is lowered in strength in the mixing tank, where pure, light, and crystalline water is added to the Gin.
