The Casebianche winery is spread over 14 hectares in the small community of Torchiara which lies in the province of Salerno, between the Acquasanta stream and the Cilento sea. Here, in 2000, Elisabetta and Pasquale left their jobs as architects to run the family farm, carrying out the first experimental vinifications, which were useful for understanding the propensity and suitability of the soil. They then met Fortunato Sebastiano, a young enologist who supported them with their first bottlings. Since then, the more than 5 hectares of land, which are also planted with olive, citrus and fig trees, have grown and developed in an environment that is unique in terms of biodiversity, to the extent of becoming a UNESCO World Heritage Site.

Casebianche's wines originate from Trebbiano, Malvasia, Fiano and Aglianico del Cilento grapes, which are all grown with complete respect for the environment and the soil. Work in the field is carefully planned and efforts are made to intervene as little as possible so as not to disturb the balance of the soil. The machinery used is simple and light, while fertilisation is natural and protective operations are carried out with copper, sulphur and clay. The soils are located on an alluvial plain, so they are mainly clayey and rich in marl and sandstone, known as Cilentano flysch. They are ideal for the cultivation of indigenous grape varieties, which are regularly harvested by hand and left to ferment, immediately after being picked. Indigenous yeasts are used to carry out the alcoholic fermentation, which takes place in stainless steel tanks. For the red wines produced from Aglianico and for the Bianco Paestum there is also a phase of ageing for a few months in oak barrels.

The Casebianche winery produces high quality red and white wines, while always keeping an eye on the future of the environment and the land. Their passion has found a welcoming home in this marvellous corner of the world where life, in whatever form and colour it takes and from every point of view, is respected fully with an almost monastic rule, demonstrating a unique and noble commitment to the new generations. The Fiano 'Cumalè' wine features the fresh, pleasant hints of white apple and nectarine, while the 'Iscadoro' is much broader, with its soft, citrusy and elegant hints, in which tropical fruit and the warm envelopment given by a period of refinement in barrels can be detected. These characteristics are common to the Aglianico del Cilento 'Cupersito' wine, which has pleasant balsamic notes, great softness and warmth. An artisanal wine produced with a unique technique and centuries of knowledge.
