Caveau de Val de l’Amour

Caveau de Val de l'Amour is a small oenological jewel of the Jura, located in the village of Cramans, a few kilometres north of Arbois. Founded in 2016, the winery is lovingly run by Sylvain Jacquot, a winemaker who takes care of his small vineyards with complete autonomy and produces expressions of impressive authenticity. For decades, Sylvain devoted his free time to his father's vineyard, vinifying grapes in parallel with his work in the timber industry, but without marketing the few bottles produced. The turning point came in 2016 when, after acquiring some old, abandoned vines, the producer decided to devote himself entirely to winemaking, while retaining the artisanal character that has always accompanied his production.

In the 2 hectares of his own vineyards, Sylvain Jacquot of the Caveau de Val de l'Amour estate raises the traditional Jura varieties, namely Savagnin and Chardonnay among the white grapes, Poulsard, Trousseau and Pinot Noir among the black grapes. The vineyards, which are very old and rooted on mostly clay-limestone soils, are conducted according to a highly sustainable approach, without the use of synthetic chemicals. In line with the agronomic philosophy, the oenological approach embraced by Sylvain is sincerely genuine, with fermentations relying solely on indigenous yeasts and the total exclusion of manipulation and adulteration, often even banning the use of sulphites. The long ageing of the wines takes place in wooden barrels, sometimes drained according to the 'sous voile' style, other times always filled according to the 'ouillé' style. Also making history is the production process of Macvin de Jura, a traditional liqueur wine obtained by fortifying fresh must by adding Marc du Jura, a typical marc spirit.
