Cellier Saint Benoit
Cellier Saint Benoit is an iconic winery in Pupillin, in the northern part of the Jura region. It is located in a rugged but sunny area, now one of the most sought-after regions in the world of wine. The Benoit family has been growing vines for four generations and, in the early 2000s, Denis Benoit decided to focus all his energy on the vineyard and winery, abandoning other crops and officially founding the 'domaine'. Today, the baton has been passed to Benjamin Benoit, who trained and honed his skills in Burgundy and New Zealand alongside vignerons such as Nicolas Faure, Aurélie Berthod and Charles Lachaux. His approach is one of continuity that does not replicate the past, but interprets it with a cultured and contemporary eye, capable of giving the Jura a personal and recognisable voice.
The work in the vineyard and in the cellar follows a strictly artisanal approach, based on an extremely detailed analysis of each plot: twelve distinct lots, each vinified separately to preserve the identity and nuances of each parcel. The vineyards, with an average age of over fifty years and some approaching ninety, are planted on a complex mosaic of blue, grey, red and white marl. The grapes are pressed whole with an ancient vertical wooden press, traditional in the Arbois area. No technical shortcuts, no stylistic forcing: spontaneous fermentation, ageing in old foudres and cuves, no clarification or filtration, and finally, manual bottling by gravity, which completes the circle of a process focused on restoring pure fruit.
