Chavost

Champagne Chavost is a Champagne-producing cooperative that operates based on a philosophy of love for their land, a value reflected in their sustainable approach and the high quality of their production. The estate was founded in 1946 by a group of winemakers from the village of Chavot-Courcourt, formerly known as Chavost, from which the winery takes its name. This commune is located a few kilometers south of Epernay, in the wine-growing region of the Vallée de la Marne. Despite the considerable volumes, the Chavost cooperative manages to adopt a genuine artisanal approach both in the vineyard and in the cellar, thanks to a rigorous internal code of practice.

The vineyards owned by Chavost cover around 70 hectares, cultivated by over 100 member growers following the principles of organic farming, certified since 2023, and dedicated to the three classic Champagne grape varieties: Chardonnay, Pinot Meunier, and Pinot Noir. The rows grow on soils rich in clay and limestone, and the harvest is carried out entirely by hand only when the grapes have reached optimal ripeness. In the cellar, vinification takes place in stainless steel vats and oak barrels through temperature-controlled fermentations operated by indigenous yeasts and lactic bacteria. Invasive practices such as the addition of additives or the use of filtration and clarification are excluded throughout the entire process, while the traditional Champenoise method is used for the secondary fermentation. The wines are finally marketed without any dosage as Brut Nature, to enhance the purest characteristics of the terroir. Additionally, the estate produces a line of Champagne without added sulfites named ‘Et sans sulfites ajoutés!’, showcasing the enological expertise of the cellar master, Fabian Daviaux, who works with grapes from a selected 5-hectare plot for this range.

In recent times, Chavost’s production has undergone significant renewal, demonstrating the innovative and modern spirit that characterizes the estate, resulting in pure and vibrant Champagnes, labeled with charming comic-style illustrations depicting the work in the vineyards and the cellar.
