Chiyokotobuki
Founded in 1922 in Sagae, a Japanese city in the Yamagata prefecture, Chiyokotobuki Toraya has been committed to producing delicious sake for over a century, with the aim of enhancing the quality of local water and rice. In fact, the origins of the sakagura date back to the early 18th century, during the Edo period, when Sozaemon Onuma began producing sake near the city of Yamagata. The success was such that a second location was opened in Yamagata and a third facility was acquired in Sagae, previously known as Ishimaya. The latter was thus separated in 1922, becoming an independent business known as Chiyokotobuki Toraya. The area in which the sakagura operates is located at the foot of the imposing Mount Gassan, the highest of the three sacred Dewa mountains, whose peak reaches nearly 2,000 meters in altitude. The leadership is currently in the hands of director Toshihiro Onuma, who bases production on the Isobe philosophy.

Since 1990, the sakagura has decisively invested in this high-quality rice, the cultivation of which was abandoned after the war. The water, on the other hand, comes from the fresh springs of the mountains, which, fed by the melting snow, flows into the cold Sagae river. This is particularly hard water, ideal for sake fermentation. The fermentation process is managed by adopting both the quick starter and the Kimoto and Yamahai methods, depending on the style of sake to be produced. In general, fermentation is slow and takes place at low temperatures during the winter.The production signed by Chiyokotobuki Toraya is now exported to various countries around the world, from the United States to Southeast Asia, passing through the main European territories. The sake falls into various categories, including the fine Junmai Daiginjo, expressions of great class. Furthermore, Chiyokotobuki Toraya is dedicated to the production of fruit liqueurs, another excellence from the Sagae area.
