Fratelli Collavo
Fratelli Collavo is a small family-run winery in the picturesque wine-growing area of Valdobbiadene, land of quality Prosecco that the Collavo family has been committed to enhancing since 2010. The project originated from the desire of brothers Massimo, Marco, and Mauro to continue the winemaking activity started by their father Cesare in the 1960s, who in turn inherited the passion from his father Giovanni, a merchant in the agricultural sector. The first land purchases date back to 1968, initially intended for the cultivation of cereals and fodder and for livestock farming. In the 1980s, the activity shifted towards viticulture, while the first independent bottlings date back, as mentioned, to 2010.
The Fratelli Collavo estate extends over a total of 5 hectares, of which 10 are dedicated to vineyards and the remaining part reserved for cereals, meadows, and woods. On calcareous and clayey soils, rich in mineral elements and often very steep, the winery predominantly cultivates Glera, the symbolic variety of Prosecco, alongside other indigenous grape varieties.Bianchetta Trevigiana and Perera. The agronomic management is based on the principles of certified organic farming, with a view of absolute respect for the environment and biodiversity. The harvest is carried out strictly by hand, and the grapes are then gently pressed before the alcoholic fermentation of the must in temperature-controlled stainless steel tanks. The subsequent sparkling process takes place in autoclave according to the Martinotti Method, also known as the Charmat Method. After a brief aging always in autoclave, the wines are finally bottled under isobaric conditions, in order to preserve their effervescence. The exception is the Frizzante 'Collfondo', produced through a refermentation in the bottle following the Ancestral Method.
The Prosecco from Fratelli Collavo effectively expresses the graceful aromatic character of Glera, supported by a refined mineral vein typical of the Valdobbiadene territory.
