Cuillier

The sparkling wine house Cuillier produces exquisite Champagne through a nature-respecting approach, aimed at preserving the health of the environment and biodiversity. The estate is located in Pouillon, a few kilometers northwest of Reims, an area where the Cuillier family has passed down the art of winemaking for generations. Today, the young Vincent Cuillier leads the winery together with his father Patrick and mother Marie-Paule, forming a family picture that operates through a sustainable and innovative vision.

Cuillier has just over 4 hectares of vineyards, located in three different hilly sub-zones: Pouillon, Trigny, and Chenay. The vineyards are dedicated to the traditional champenoise varieties Pinot Meunier, Pinot Noir, and Chardonnay, rooted in soils made up of sand, limestone, flint, and clay aggregates, depending on the reference sub-zone. In the vineyards, the estate adopts sustainable practices such as cover cropping, fertilization with self-produced compost, and agroforestry, a practice that involves creating a system.mixed farming by planting trees and shrubs around the rows. The winery also holds HVE certification for high environmental value and is in conversion to organic farming. After the harvest, which is done entirely by hand and accompanied by careful selection of the grapes, the bunches are transferred to the winemaking environment where fermentations take place spontaneously in stainless steel tanks or in 228 and 500-liter wooden barrels, without the use of any external inputs. The subsequent sparkling process occurs in the bottle according to the Metodo Champenoise, with prolonged aging on the lees that can last up to 10 years for the most complex and precious Champagnes.
