Distina
Distina is an Emilia-based production reality specializing in the processing of wine and grappa from the varieties of the Piacenza territory. Founded in 2017 from an idea conceived in 2015, Distina arises from the desire of the Campaner family, originally from Milan, to vinify and distill while returning the waste to the land. The estate is located in the Colli Piacentini, precisely between the Val d'Arda and Val Ongina, on the border with the province of Parma. For the distillation aspect, the family has relied on the competence and experience of master Vittorio Capovilla, a reference point for the sector, where Claudio Campaner had the opportunity to learn the secrets of the trade.
The Distina estate extends over an area of 6 hectares, of which 3 are dedicated to vineyards, half a hectare to an orchard, and the remaining part to arable land. The local grape varieties Ortrugo, Malvasia Bianca di Candia Aromatica, Moscato Bianco, Trebbiano Romagnolo, Barbera, and Croatina, also accompanied by Marsanne and Sauvignon Blanc, are cultivated on soils consisting of white clays and sand at an altitude of over 250 meters above sea level.sea level. The vines, managed under certified organic regime, have a very variable age, with plantings ranging from 1980 to 2012. Once they reach maturity, the grapes are harvested entirely by hand in crates, and the enology applied by the winery is minimalist, respectful of the character of the territory and the vintage. As wine containers, fiberglass and concrete tanks are used, and fermentations occur spontaneously thanks to the action of only indigenous yeasts. Furthermore, throughout the entire processing, the use of clarification or filtration operations is excluded. Instead, the distillation process takes place in a water bath intermittently, and the distillates are mainly aged in stainless steel tanks, with the exception of some grappa that ages in oak barrels.
