Domaine de Chassorney

The Domaine de Chassorney is a creation of the famous winemaker and oenologist Frédéric Cossard, an important figure in the wine scene of Burgundy. Coming from a family that was already involved in viticulture, Frédéric began his career in the commercial field and in the acquisition of grapes and wines. Towards the mid-1990s, he started to take a personal interest in some vineyards located in the municipal territories of Saint-Romain and Auxey-Duresses. These are two emerging areas of the Côte de Beaune, occupying the slope that rises from Meursault towards the Haute Côte de Beaune. An area that in recent years has been highlighting significant potential, also as a result of ongoing climate changes, which force the search for vineyards in cooler climate zones more frequently.

Saint-Romain is located at the foot of a cliff, at a rather high altitude in the landscape of the Côte de Beaune. The area boasts ancient origins in the field of viticulture. In these places, the first vineyards were planted during the Gallo-Roman period (1st century BC). The soils are composed of limestone marls, with the presence of clays. The vineyards are cultivated at a height ranging from 280 to 400 meters above sea level, with exposure facing south, southeast, and north, northeast, in a habitat particularly suitable for Chardonnay. The area of Auxey-Duresses is located halfway between Saint Romain and Meursault. Once under the control of the Abbey of Cluny, the area has always been dedicated to viticulture. The denomination is divided into two parts, the one towards Monthélie, characterized by limestone marl soils, is especially suitable for the cultivation of Pinot Noir, while the area stretching towards Meursault, with its limestone soils, is the kingdom of Chardonnay.

The Domaine de Chassorney extends over a total of about ten hectares, with parcels in the territories of the denominations Saint-Romain, Auxey-Duresses, and Pommard. The agronomic management is conducted following the principles of organic farming, with low yields and maximum attention to the quality of the grapes. The harvests are carried out only manually, with selection of the bunches both in the vineyard and before proceeding to vinification. In the cellar, oenological interventions are kept to a minimum, with fermentations started only with indigenous yeasts and a very low use of sulfites. The wines are straightforward, genuine, and reflect in a direct and authentic way the characteristics of the terroir of origin.
