Domaine Fabien Coche
The Domaine Fabien Coche represents a valued family-run wine estate in the Côte d’Or with a classic and artisanal style. The winery is located precisely within the small and renowned village of Meursault, in the heart of the Côte de Beaune. Since 2005, Fabien, the fourth generation of the Coche family, has been at the helm, having taken over this Domaine whose origins date back to the 1940s when it was founded under the name Coche-Bizouard. Once, the estate also included the prestigious Coche-Dury winery, currently managed by Raphael, Fabien's cousin.
The 12 hectares of vineyards of the Fabien Coche winery are spread across the municipalities of Meursault, Pommard, Auxey-Duresses, Monthélie, Saint-Romain, Saint-Aubin, and Puligny-Montrachet. The vines, some of which are also centuries old, are rooted in clay-limestone soils with the presence of marls, dedicated exclusively to the native grape varieties Chardonnay, Pinot Noir, and Aligoté. The agronomic management follows the principles of organic and biodynamic agriculture, and the yields are maintained.low to elevate the quality of the grapes. Following the manual harvest, the bunches of white grape varieties are usually subjected to a short pre-fermentation maceration of 24-48 hours and then gently pressed whole, while the Pinot Noir is partially vinified as whole clusters with a very delicate extraction. The winemaking technique adopted by the Domaine is minimalist and traditional, with spontaneous fermentations and well-measured aging on fine lees in French oak barrels. The use of clarification or filtration processes is excluded, and sometimes no sulfites are even added.
The Meursault is the crown jewel of the production of the Fabien Coche winery, which boasts some of the most prestigious climat of this renowned Burgundy AOC such as Perrieres, Charmes, and Goutte d’Or. The Domaine's imprint is played on class and elegance, aimed at offering expressions of irresistible classicism.
