Domaine Pavelot
Domaine Pavelot is a family-owned winery that has been cultivating vineyards and producing wines in Burgundy for many generations. The estate is located in Pernand-Vergelesses, in the heart of the Côte de Beaune, between Savigny-Lès-Beaune and Aloxe Corton. Luc and his sister Lise represent the seventh generation and passionately cultivate the 10 hectares of property, thanks to a centuries-old savoir-faire. The management of the domaine is inspired by respect for nature and ancient customs. In the vineyard, agricultural practices are applied that preserve the vitality of the soils, the natural balance of the plants, and the environmental biodiversity of the local flora and fauna, enriching the life of the vineyard. A healthy approach that allows for the production of great wines.
Pernand-Vergelesses is a prestigious Appellation. Within its territory, there are 8 Climat classified as Premier Cru and 3 Grands Crus: Corton, Corton-Charlemagne, and Charlemagne. The area of the denomination is located at the meeting point of two valleys, in the highest part of the Côte de Beaune, characterized by the the dominant presence of the Montagne de Corton and vineyards with significant slopes. Most of the vines have an east-facing exposure and are located at an altitude between 250 and 300 meters above sea level, which ensures excellent sunlight in the morning hours. The climate is cool and breezy, perfect for the typical varieties of the area. The lower part features deeper clay-limestone soils with gravel. In the central part of the hill, there is a calcareous area rich in pebbles ideal for Pinot Noir, and in the upper part, the brown marl soils are very suitable for Chardonnay.
The estate consists of high-quality parcels, some of which have old vines over 90 years old. The agronomic management of the vineyards is carried out according to the principles of organic and biodynamic agriculture, trying to intervene as little as possible, only with sulfur, copper, and other natural preparations aimed at strengthening the vitality and resilience of the plants against pest or mold attacks.
