Domaine Pierre et L’Étoile
Among the emerging young artisan wineries of Languedoc, the name Domaine Pierre et l’Étoile stands out, a small estate in the Hérault area that embraces a genuine philosophy and creates interpretations of great expressiveness. The Domaine is located exactly in the municipality of Assignan, west of the city of Béziers, an area where in 2017 Pierre Regnault officially started his winemaking project following the reconversion of some vineyards, supported by his partner Estelle, family, and some friends. The name of the Domaine literally means "Pierre and the star", a tribute to Pierre's partner.
Domaine Pierre et L’Étoile includes less than 5 hectares of vineyards, divided into 7 different plots reserved for traditional varieties Carignan, Syrah, Grenache Noir, Grenache Blanc, and Chenanson, the latter a genetic hybrid created in 1958 in Montpellier by crossing Grenache Noir with Folle Noire. The vines benefit from the clay-limestone matrix of the soils, at an altitude of about 260-270 meters.at sea level and the organic management applied by Pierre Regnault, certified since 2020. When the grapes reach maturity, manual harvesting is carried out, followed by separate vinification for each plot according to a minimalist approach. In this perspective, fermentations occur spontaneously in stainless steel tanks or fiberglass due to the presence of only indigenous yeasts, and clarification or filtration operations are banned, as well as the use of any oenological inputs, including sulfites. Furthermore, bottling occurs by gravity in such a way as not to stress the wines.
From these genuine premises, the range of labels from Domaine Pierre et l’Étoile takes shape, composed of pure expressions with an irresistible juicy taste. These are red, rosé, and orange wines of wonderful drinkability, produced with artisanal care in respect of the character of the varieties and the territory of origin.
