Domaine William Fevre
Domaine William Fevre is one of the largest and most extensive wine estates in the Chablis area of Burgundy, which over the decades has established itself as one of the ambassadors of the region in the world. With over 250 years of connection between his family and the Chablis area, in 1959 William Fevre inaugurated his first harvest. The goal of the Domaine has always been to extract the expression of the terroir while respecting local viticultural tradition and preserving the health of the ecosystem.
From the 7 hectares of vineyards with which William Fevre started his winemaking activity, it has grown to the current 78 hectares, spread over 90 different plots and exclusively dedicated to Chardonnay, the noble white grape variety that is an inseparable part of the wine identity of the area. Of these, 15 are classified as Grand Cru and another 16 as Premier Cru, testament to the prestigious viticultural heritage of the estate. The vineyards, managed according to the principles of organic farming, are located on the banks of the river Serein, where the characteristic Kimmeridgian soil, characterized by an alternation of marls, limestone marls, and marine fossils, gives the wines unique attributes. The harvests are carried out by hand and in the cellar, modern and cutting-edge technologies are used for winemaking. During aging, old wooden barrels of about 6 years of average age are employed, thus safeguarding the original characteristics of the wines without resorting to new woods that could alter them.
The labels produced by Domaine William Fevre faithfully reflect the attributes that Chardonnay assumes in the Chablis area, namely sharp freshness and pronounced mineral vein. Some of the most prestigious lieu-dits bottled by the winery include 'Les Clos', 'Bougros', 'Les Preuses', and 'Valmur' among the Grand Cru, 'Vaulorent', 'Beauroy', 'Montée de Tonnere', and 'Vaillons' among those classified as Premier Cru. Interpretations capable of effectively expressing the infinite peculiarities of Chablis, one of the most suited areas for the production of white wines in the world.
