Domenis 1898

It was 1898 when Pietro Domenis founded his distillery in Cividale del Friuli, in the province of Udine, with the aim of producing grappas of the highest quality. Using an ancient production method, he embraced the distillation art starting from various raw materials such as white pomace, black pomace, and fresh fruit, crafting a grappa appreciated for its superior organoleptic qualities that distinguished it from the common grappas of the time. Over the following decades, several generations of the Domenis family passed down the knowledge of the trade, knowledge that Pietro passed on to Emilio, who in turn passed it on to his sons Pietro, Silvano, and Dino. Today, at the helm of this family-run reality is Cristina, the fourth generation of the Domenis distillery, who, thanks to the family's century-old experience and utilizing the most modern technologies in the sector, continues to produce high-quality products, with a range that, in addition to grappas, includes gin, bitters, sambuca, vermouth, and creams.

The production process of Domenis begins with a strict selection of raw materials coming from over 300 Friulian wine estates. The selection takes place throughout the entire harvest period and is aimed at collecting the freshest pomace, which is immediately stored in silos protected from air until the moment of distillation. A guarantee of quality is the discontinuous copper distillation plant used, consisting of eight direct steam stills that manage to extract only the best aromas contained in the pomace. The processing is entrusted to the passion, sensitivity, and care of the master distillers, skilled in adapting the plant to the characteristics of the raw material.

Domenis has a wide and varied production, with the ‘Historical’ line, inaugurated in 1986 by brothers Pietro and Silvano, which includes some of the most prized products made by this Friulian distillery. Domenis is also the creator of a line of certified organic products, as a testament to its active commitment to environmental protection.
