The Mexican brand Don Mateo de la Sierra specializes in the production of fine and authentic mezcal within the state of Michoacán, where mezcals with a character quite different from those produced in Oaxaca come to life, the state from which most of the production of this traditional Mexican distillate originates. The master distiller of this mezcaleria is Emilio Vieyra Rangel, a descendant of the founder Don Mateo Rangel, who emigrated from the state of Guanajuato to Michoacán in 1840, starting to produce mezcal. Emilio represents the sixth generation of maestros mezcaleros in the Rangel family, committed to nurturing the long tradition of his lineage by directly managing each phase of the production process. The estate, locally called "vinata”, is also certified “Bat Friendly”, for the protection of pollinator species of agave such as bats.

Among the varieties processed by the vinata are agave Cupreata, agave Inaequidens, and agave Americana subspecies Subtilis. The production of mezcal from Don Mateo de la Sierra begins with the harvesting of mature agave and subsequent cleaning of the plant to obtain the so-called “piña”, the sugary heart of the agave, so named for its peculiar shape resembling that of a pineapple. At this point, the piña is cooked in traditional volcanic stone ovens, in order to break down the complex sugars contained in it into simple sugars, and is then mechanically ground before spontaneous alcoholic fermentation in oak vats embedded in the floor. Once the fermentation process is complete, the fermented liquid is distilled twice and the resulting liquid is placed directly into bottles as mezcal Blanco, the only type produced by the distillery.
