Espolon
Espolon is a Mexican tequila brand from the State of Jalisco, known for its spirits that reinterpret the established tequila tradition in a modern key. The founder of the distillery was the maestro tequilero Cirilo, who decided to create high-quality tequila following an incident. One day in the '90s, Cirilo brought a bottle of tequila to a party, and the spirit turned out to be terrible, not up to the standards of Mexican tradition. He then noticed that all his friends preferred the exotic flavor of brandy made outside of Mexico. Proud of his heritage and love for his land, Cirilo decided to enhance the ancestral expression of tequila without being limited by traditions, aiming to create a spirit of remarkable quality. In 1995, he met a Mexican entrepreneur with whom he became partners, and a year later, the Espolon project officially began with the construction of the Casa San Nicolas distillery in Los Altos de Jalisco. The Spanish term espolón translates to spur and was chosen by Cirilo to highlight his resolute commitment to true tequila and authentic Mexican art. Unfortunately, Cirilo passed away in 2020, but with his tequilas, he left an innovative stylistic legacy that will continue to live on.
Behind the production of Espolon-branded tequilas are years of cultivation of only Blue Weber agave, hand-harvested at full maturity. The heart of the agave, called piña, is then steamed in custom steel autoclaves and is subsequently crushed to extract the sugary juice contained within. During the subsequent alcoholic fermentation of the liquid, classical music is played as Cirilo believed that sound vibrations favor the course of the fermentation process. Distillation occurs in a combination of traditional Pot and column stills, and except for the Blanca version, which is bottled directly,bottled, the masses age in new American oak barrels.
