Ex Fabrica
Ex Fabrica is a small brewery from Emilia-Romagna located in Vigolzone, between the historic walls of the magnificent village of Grazzano Visconti. A brewing gem nestled in the Piacentino area, between the Trebbia and Nure rivers, in a fascinating and fabesque context, from which it takes its name: an old canning factory from the early 1900s. The new brewing vocation of this place began in 2013, and today it has reached an annual production of 2000 hectoliters, suggesting ample growth margins for the future. The latest addition has been the opening of a brewpub and bistro with a visible brewing system!
The beers of Ex Fabrica are icons of simplicity, quality, and passion. Only four ingredients are listed on the label: water, malt, yeast, and hops, expertly chosen and measured, from the malting phase to the hopping, in order to make a always distinctive and singular production style recognizable to the public. Cristian Franzi is responsible for the entire production chain, master brewer since 2013,after a happy professional experience at Tum in Munich and in other German breweries. Not by chance, the malt comes from high-quality barley processed by a German farmer and represents the backbone of Ex Fabrica's recipes, which has invested heavily in enhancing a mindful and aware taste chain at every stage of production.
Ex Fabrica focuses its entire production line on top-fermented beers, which carefully embody the German rigor of bottom-fermented beers, in order to bring light, balanced, and harmonious liquids into the bottle. After the first tumultuous fermentation, the beers mature for at least 7 weeks at a controlled temperature, before being packaged and undergoing re-fermentation in the bottle or keg, acquiring all the liveliness and gas that every drinker expects to find upon tasting! At Ex Fabrica, there is no filtration and no pasteurization by conscious choice: any mechanical or thermal treatment could disrupt the natural balance of the beer, altering its authentic taste.
