Fabbrica di San Martino
The Fabbrica di San Martino is located on the Tuscan hills northwest of Lucca, just five kilometers from the historic center, in the heart of the Lucchese Hills and along the famous Wine and Oil Road. The winery is housed in a farmhouse built in 1751, meticulously restored, which dominates a breathtaking panorama to the south: the medieval walls of Lucca, the plain, the Serchio river, and the surrounding mountains provide a backdrop to a property that carries centuries of farming history. Floors, ceilings, beams, stuccos, and original furnishings have been carefully restored to return the refined atmosphere of an era when beauty was part of everyday life. This is not just a simple agriturismo, but a place where time seems to have stopped.
The production approach of the Fabbrica di San Martino is deeply biodynamic, based on a constant dialogue between man, the land, and the astral cycles. In the vineyard, no chemical fertilizers are used: it is the vines themselves that dictate the rhythms and guide agronomic choices, based on careful observation of the plants and the soil. Biodynamic preparations such as horn manure 500 and the horn silica 501 are dynamized directly by the winery. The winter cover crop completes the regenerative cycle, returning the necessary vitality to the soil to grow quality grapes. In the winery, the philosophy does not change: only indigenous yeasts, no additives, no filtration. Fermentation is spontaneous and the levels of sulfur dioxide are kept to a minimum.
