The cool temperatures, perfect exposure, and constant ventilation allow the vines to produce ripe clusters rich in flavors and aromas. In the winery, Jessica follows a non-invasive approach, letting the must spontaneously turn into wine. The alcoholic fermentation is catalyzed by indigenous yeasts and lasts about 25 days. Depending on the type of wine, maturation takes place in large Slavonian oak barrels for a variable period ranging from 8 months to 48 months.
The Fattoria del Pino line offers Brunelli and Rossi di Montalcino of great impact and character, with an elegant and very intense structure. The tannic texture is well stitched onto a refined and full-bodied structure, which despite its lively freshness, maintains an intense and decisive character.
