The Thill family, originally from Luxembourg, moved to France in the early 19th century, starting to cultivate grapes in the municipalities of Verzy and Verzenay, directing their production to sell to other Maisons. It was Fernand Thill, in 1953, who began to vinify and market Champagne under his own label, passing on the passion for the land and knowledge in the sparkling art to his second daughter Marie-Thérèse. Today, Thomas leads the estate with the same care and love as his grandfather and mother before him. The varietal platform of RM Fernand Thill includes 60% Pinot Noir, the emblematic grape of the Montagne de Reims, and 40% Chardonnay, grown on the characteristic gypsum-rich soils in the cool climate of Champagne. In order to preserve the health of the territory, the agronomic management applied by the Thill family is sustainable and rational, without the use of pesticides or chemical herbicides, aimed at respecting the cycles of nature and biodiversity. Following the harvest, the grapes are immediately transferred to the winery and vinified with care and attention in stainless steel tanks. A key step in determining the quality and style of the Fernand Thill winery is then the blending operation, which consists of determining through various tastings the ideal combination of grapes, parcels, and reserve wine for each label. This is followed by the sparkling process in the bottle according to the Champenoise Method and then an adequate resting on the lees in glass before the degorgement and final dosage, which is always Brut.
