Mikulski Francois
The Francois Mikulski winery is one of the protagonists of Burgundy that, in the production of its wines, seeks to enhance the typical qualities of the terroir of the Cote de Beaune: authenticity, elegance, and purity. Francois, the owner, is of Polish origin, but was born in Dijon and founded the winery together with his wife Marie-Pierre in 1991, after studying oenology and a long work experience in California.
The vineyard of Francois Mikulski is located in the municipality of Meursault and spans 9 hectares, partly belonging to an old uncle, Pierre Boillot. In managing the vineyard, Francois has adopted the practices of organic farming, even though he does not have certification: for him, the primary importance is the production of healthy grapes and respect for the biological balance. Natural compounds and plant protection products that respect the environment are indeed used in the cultivation of the vines. The varieties cultivated are Chardonnay, intended for the production of Meursault, and Pinot Noir, from which wines are made Volnay.
The grapes harvested during the harvest are transported to the winery, where, after a gentle pressing, they are left to ferment on indigenous yeasts for 3-4 months. Subsequently, the wines are left to mature on the lees for 12 months and, at this stage, only 15-20% of new wood is used. The wines of Francois Mikulski possess significant aromatic richness, good minerality, and freshness. They fully express the terroir of origin and also demonstrate good aging potential. Francois proves to be an original vigneron with horizons open to the world, as can also be seen from the labels chosen for his bottles.
