Michel Gahier is a talented artisan winemaker from Montigny-lès-Arsures, a municipality in Jura located not far from the more famous town of Arbois and renowned for the quality of its Trousseau. Michel embarked on his winemaking adventure by managing his father's farm, which until then had been focused on livestock and the cultivation of various plant species, including the vine. Michel directed the estate towards a primarily wine-growing focus, quickly establishing himself as one of the master winemakers of the region thanks to his genuine and non-interventionist production philosophy.

The estate managed by Michel Gahier spans 7 hectares of vineyards, represented by vines that are over 80 years old, cultivated according to the principles of organic farming and using herbal treatments to stimulate the plants' natural resistances. Additionally, for plowing, Michel relies on horses to preserve the integrity of the soil structure. The cultivated varieties include Trousseau, Savagnin, Chardonnay, and Melon à Queue.Rouge, a white grape variety related to Chardonnay, all vines are grown on soils characterized by a high presence of marls. The harvest is done entirely by hand with careful selection of the grapes, and in the winery, the fermentations occur spontaneously thanks to the presence of indigenous yeasts. For winemaking and aging, only old oak barrels are used, and Michel's winemaking approach embraces both the traditional sous voile style, with long aging in empty barrels under the veil of flor yeasts, and the ouillé style, which is non-oxidative, with frequent topping up of the barrels. Throughout the entire production process, clarification or filtration operations are banned, and often even the addition of sulfites.
