Giboulot
The Domaine Emmanuel Giboulot is located in Beaune, Burgundy. It is the classic family-run estate, which has always distinguished itself for its respect for nature. Already in the 1970s, it began to apply the principles of organic farming, eliminating chemical herbicides and pesticides, in favor of mechanical soil work and the use of sulfur and copper against powdery mildew and downy mildew. A pioneering revolution at a time when sensitivity towards organic production was still not widespread. At the same time, vinifications and aging practices began to be carried out for individual parcels in the cellar, in order to understand and highlight the peculiar character of each single vineyard of the Domaine.
The property extends over 12 hectares, of which about 5 in Côte de Beaune, in the lieux-dits: la Grande Châtelaine, Les Pierres Blanches, and La Combe d’Eve, all cultivated with white grape varieties. The rest of the vineyards are located in Saint-Romain, in the area of the Hautes Côtes de Nuits, and in Rully, in the Premier Cru La Pucelle.
Since 1985, the estate is managed by Emmanuel, who has followed the path traced by his father, continuing on the path of organic farming and obtaining biodynamic certification in 1996. The vineyard is the center of all activity, and great importance is given to soil vitality and natural biodiversity, which allows for a healthy ecosystem in natural balance. The philosophy is oriented towards the search for the typicity of the terroir expressed through healthy and genuine grapes, brought to maturity with low yields and in the most natural way possible.
An approach to the world of wine that translates into the desire for absolute purity, understood as a direct expression of the vineyard directly in the glass. The work of man is considered only a necessary means to transform the must into wine with minimal intervention, always keeping the varietal aromas and the personality of the terroir of the vintage in the foreground. It is precisely the search for absolute adherence to the vineyard that has led over time to produce numerous labels, which perfectly illustrate the complexity of the territory and make its distinctive features appreciated.
