Gin Giüst
Gin Giüst is a young distillery from Lombardy founded in 2020 with the intention of offering a high-quality Gin through an artisanal distillation technique. The headquarters of this production reality is located in Chiavenna, in the province of Sondrio, among the majestic alpine ridges of Valchiavenna, and behind its foundation is the enthusiasm of Mauro Ferrari, Marco De Stefani, and Omar Bertolini. The distillery's logo is a Ü, where the black U represents the profile of Valchiavenna while the green umlaut (¨) recalls the color of the local herbs used in the production of Gin. Because this distillate aims to be, above all, an expression of the territory.
The production of Gin Giüst is based on natural and high-quality botanicals, as well as on artisanal honey from Valle Spluga. The water, pure and light, comes from the springs of Val Bregaglia, appreciated since the 19th century in the production of alcoholic beverages. The artisanal distillation method follows the procedure of London Dry Gin, which consists of using only agricultural origin ethyl alcohol subjected to a second distillation in traditional stills in contact with the botanicals. The contact occurs both directly with the liquid inside the still and in vapor current, in order to obtain a greater aromatic concentration. The addition of flavors, colorants, and other artificial substances is strictly excluded. In particular, the ingredients used in the production of Gin are: soft wheat distillate produced in Italy and certified by organic agriculture, numerous spontaneous botanicals from Valle Spluga, including juniper berries, dried root of Angelica sylvestris, and flowers of Genepì and Achillea moscata, artisanal wildflower honey produced by the De Stefani family, and Acqua Frisa, a microbiologically pure oligomineral water from Val Bregaglia.
