Boillot Henri

Domaine Henri Boillot is located in Meursault, in the heart of the Côte de Beaune. It is a family-run estate managing about 13 hectares of vineyards, cultivated with Chardonnay and Pinot Noir, divided into many high-quality plots, often classified as Grand Cru and Premier Cru within the municipal territories of Meursault, Puligny-Montrachet, Bâtard-Montrachet, Volnay, Pommard. The origins of the Domaine date back to 1885, when the Boillot family began dedicating themselves to vine cultivation. After four generations, the estate has preserved its artisanal character, valuable savoir-faire, and deep knowledge of the land. The company philosophy is focused on the pursuit of uncompromising excellence, with the sole aim of giving voice to a terroir renowned for centuries for the excellence of its wines.

The location in Meursault is particularly strategic. The small village, famous worldwide, is situated between two other extraordinary Appellations of the Côte d'Or: Puligny-Montrachet, the cradle of Chardonnay and the production site of some of themost prestigious white wines and Volnay, always renowned for the extraordinary finesse and elegance of its legendary Pinot Noir. The Domaine embodies this dual spirit and produces both whites and reds of exceptional quality, perfectly representing the great tradition of Burgundy through its emblematic grapes. The area of Puligny-Montrachet is characterized by brown soils of limestone matrix and layers of calcareous-clay marls, resting on limestone bedrock, ideal for Chardonnay. The soils of Volnay, on the other hand, consist of calcareous lands resting on schist rocks, a terroir particularly suited to Pinot Noir.

The Domaine pays particular attention to the vines. All work is done by hand, from winter pruning to harvest, which is carried out with a rigorous selection of the grapes, first in the vineyard and then in the cellar. The agronomic management is very environmentally friendly, and since the 1990s, low-impact sustainable farming practices have been adopted. As is customary for theterritory, the vines have been planted at high density and are managed with low yields per hectare, in order to obtain grapes of extraordinary aromatic concentration. The vinifications take place in a simple and traditional manner, trying to intervene as little as possible to preserve varietal richness. For aging, French oak barriques are used, with a percentage of new wood that varies depending on the vintage and the cuvées.
