In the prestigious Burgundian Côte de Beaune, precisely within the commune of Saint-Aubin, lies Domaine Henri Prudhon & Fils, a strictly family-run winemaking entity that has been dedicated to the production of wines intimately linked to the terroir for nearly a century. The origins of the Domaine date back to 1945, when Henri Prudhon, the son of a winemaker, started the winemaking business after combining his own family's estates with those of his wife. Initially, the estate's production was sold mostly as grape must or wine to large local businesses. However, with Henri's son Gérard, the Domaine began in the early 1980s to bottle and market wine independently. In the years that followed, the winery's vineyard stock was expanded through purchases in the territories of Chassagne-Montrachet and Puligny-Montrachet, with the Domaine managing to consolidate its name in foreign markets as well. Currently, the winery is led by Gérard's sons Vincent and Philippe, who have degrees in wine economics and oenology, respectively. The two brothers continue the work of expansion and modernization begun by their predecessors, always remaining faithful to the tradition of the terroir.

Domaine Henri Prudhon & fils covers just under 15 hectares of vineyards, reserved for the indigenous varieties Chardonnay, Pinot Noir and Aligoté, all grown in the traditional way. Harvesting is done entirely by hand when the berries have reached the perfect balance between sugars and acids, with the white grapes then being directly pressed and the Pinot Noir clusters first being destemmed. Alcoholic fermentation follows, in wood for the Chardonnay and in stainless steel tanks in contact with the skins for the Pinot Noir. Instead, aging and malolactic fermentation take place for all wines in French oak barrels, with a low percentage of new wood so as not to mask the characteristics of the terroir.

Saint-Aubin represents the core of the production of Domaine Henri Prudhon & fils, an appellation interpreted through several climat Premier Cru wines. These include 'Les Castets', a Chardonnay of depth and breadth that expresses the noble qualities of the Saint-Aubin terroir
