High West
The High West Distillery is a young reality that was created in 2006 by David Perkins and his wife Jane. It is located in Wanship, in the state of Utah, near Park City and not far from the famous city of Salt Lake City. The idea of opening a distillery came to David Perkins by noticing similarities between his work as a biochemist and the fermentation and distillation processes of Whisky. The love for the epic of the old West did the rest and already in 2007 the new company began its first distillations to produce American Bourbon Whisky and Rye Whisky. A dream that came true in a short time and that led High West to establish itself among the most interesting young distilleries in the American landscape.
The activity began in the building of a typical Saloon of the old West cities, with a 250-gallon still, which allowed for the distillation of small batches in an absolutely artisanal style. The quality of High West Whisky has quickly determined the success of the brand, which, starting from a predominantly local distribution, began to make itself known, first within the US market and then internationally. In the following years, other locations were opened and in 2015 a new space was inaugurated, mainly used as a reception area for educational tours on the world of Whisky. The historic Saloon location is still used today as a characteristic area for visits and tastings.
High West bottles prominently feature, above the label, the image of a horseshoe, found during the renovation of the building "National Garage". The range of labels stands out for its search for a classic taste, in the best tradition of good American Whisky. The most famous distillate is the American Prairie Bourbon, a bottle named after the American Prairie Reserve, a project aimed at creating a large National Park to preserve an unspoiled territory for bison, antelope, and other animals of the American wildlife. Completing the range is an Rye Whisky intense, rich and spicy, the Double Rye, and a selection of fine Limited Release and Utah-Only & Special Releases.
