Hinotori

Hinotori is a Japanese whisky brand produced at the small Hekinan distillery, located in Aichi Prefecture in the central-southern part of Honshu Island. It is a craft operation founded in 1949, which had to cease its activities a few years after its inception due to two natural disasters that occurred during the 1950s. In 2019, the distillery resumed production after the long hiatus, deciding to celebrate its 70th anniversary by releasing the ‘Hinotori’ brand in a limited edition. The term "hinotori" indeed means "phoenix" in Japanese, a mythological bird symbolizing rebirth, which is also depicted on the labels of the bottles. The brand is distributed and marketed by BBC Spirits, a company founded in France in 2010, specializing in the distribution of high-quality spirits from around the world.

For the production of Hinotori whisky, various grains are used, including corn and wheat, which impart more intense notes in the case of corn and more delicate ones for wheat. The grains are prepared for alcoholic fermentation, followed by distillation in a copper pot still specially designed by the Hekinan distillery under the expert supervision of the master distiller. For the subsequent aging phase, which lasts at least 5 years, used American white oak barrels are employed to achieve a less pronounced wood impact. The whisky is then bottled without any cold filtration to provide a purer, fuller, and deeper expression, and should not be chilled as it may cause cloudiness in the precious liquid.
