Hostomme family lives in Chouilly, the Grand Cru of Champagne, in the Cote des Blancs, since the sixteenth century, but is only in the late nineteenth century that Paul decided to leave the agricultural practices to devote himself exclusively to the cultivation of the vine. Between 1880 and 1910 a tragedy of enormous dimensions damaged all the Europe: the phylloxera, a terrible parasite that attacks the roots of the vines and destroys them in a short time.

Paul fought with all his might against the terrible scourge, which saw years of work go up in smoke and, at the end of the epidemic, he worked with tenacity and sacrifice to restore the destroyed vineyards, using the American grafting technique of its screws on foot theory developed by the International Congress held in Bordeaux in 1881 against phylloxera.

In 1930 his son Marcel processes the first cuvee that will be marketed under the brand name M Hostomme. Those are particular vineyards of the Cote des Blancs, located on the slopes of hills, which at the top are covered by forests, which have a clay soil, so that the roots of the vines can drainage and play a very important regulatory role for the maturation of the grapes.
