Jacquesson

The historic French winery Jacquesson rightfully enters the Olympus of Champagne, a very exclusive and prestigious club conquered with bubbles of magnificent elegance and complexity. The Maison was founded by Mimme Jacquesson at the end of the 18th century in Dizy, just north of Epernay, achieving great success from the very beginning. Since the 1980s, the brothers Laurent and Jean-Harvé Chiquet have been leading the estate, having strongly contributed to the birth of a legend. One of the strokes of genius of the two brothers was the introduction of the ‘Cuvée 7**’, based on a single declared vintage combined with reserve wines, according to a transparent approach aimed at offering the purest manifestation of the terroir and the base vintage, providing a sans année that is always different.

Hautvillers, also in the Vallée de la Marne. In general, the soils are characterized by the peculiar chalky subsoil that distinguishes the Champagne region, while the foundations of agronomic management are the exclusion of herbicides, low yields of grapes per hectare, and harvesting at full ripeness. All fermentations take place in large oak barrels, with complete malolactic fermentation, and the masses always remain in wood to mature on the fine lees for about a year. For the preparation of the cuvées, a percentage of about 30-35% of vin de reserve is used, and the second fermentation occurs in the bottle according to the Champenoise Method, with prolonged aging on the lees that exceeds even 90 months. The final dosages are kept very low or completely excluded, in order to not interfere with the pure expression of the terroir. For the same purpose, during the preparation of the sparkling base, the use of clarification or filtration operations is banned, and the use of sulfites is minimized to the necessary minimum.

The production of the legendary champenoise reality Jacquesson is divided into three lines: the lieu-dits line, which includes vintage Champagnes produced exclusively in the best years and derived from a single prestigious lieu-dit, the famous range of ‘Cuvée 7**’, which has already been mentioned, and the ‘Dégorgement Tardif’ version of the same ‘Cuvée 7**’. Regardless of the label in question, the fil rouge of the production signed by Jacquesson is the vibrant and deep personality of each single bottle.
