Koi

In the metropolitan area of Bologna, within the municipality of Valsamoggia, the wine company Koi was founded in 2018, a creator of territorial and spontaneous expressions made through a craft production approach. Where possible, the winery is committed to recovering old vineyards and traditional training methods. "Koi" is a Japanese word meaning "carp", a fish that symbolizes perseverance and nonconformity in Japanese culture, values that embody the philosophy of Flavio Restani, the owner of Koi, who, after various experiences with important Lambrusco producers, decided to go independent and create his own wines.

The 3.5 hectares of owned vineyards are planted on medium-textured soils with a prevalence of clay. The cultivated varieties, all indigenous, include Lambrusco Grasparossa, Lambrusco Maestri, Trebbiano Modenese, Trebbiano di Spagna (or Trebbiano Giallo), Pignoletto, Alionza, Albana, and Moscato. The plants, aged between 30 and 50 years, are mostly trained according to the Bellussi system, an ancient and increasingly rare form of training, also known as "a raggi", which consists of 4 particularly tall vines supported by a pole, each originating a cordon directed towards the inter-row. The abandonment of this training system by grape growers is due to the impossibility of mechanizing agronomic operations. The agriculture adopted by Flavio Restani, highly sustainable in nature, relies on organic certification, while the practices on which the winery's work is based include: soft pressing of whole clusters, fermentations carried out exclusively by indigenous yeasts, exclusion of any oenological additives or preservatives, and elimination of filtration or clarification of the masses.
