Salvioni family is one of the historical presence of Montalcino: it owns a famous pharmacy from more than a century, bought by Biondi, and today his name is linked to the excellence of the wine territory. Thanks to Giulio, in 1985 the first grapes of Sangiovese from the Cerbaiola vineyard have been bottled.
The vineyard that gives life to the great Brunello that we all know is laid out in a single block, thus allowing a timely operations. It is David, Giulio’s son, to deal with the management of the vineyards.
The different geological nature of soils corresponds to as many variables of expression in the grapes brought to maturity. The strong relationship between Giulio and Attilio Pagli, winemaker company, provides continuity to the quality of production: "if it does not deserve the Brunello, I only do the Red", Giulio bluntly explains, revealing an almost obsessive attention on the quality of the grapes. Moreover, only perfectly ripened grapes can produce a great wine, capable of achieving excellence in every year of its launch.
The perfect balance of wine comes from a rare blend of freshness (we are at 420 above sea level), from the exposure to the morning sun (south-east), from the clayey soil and the planting density that is not exaggerated so to allow the plants to have much space available, facilitating the circulation of air.
Cerbaiola Salvioni is an institution of Brunello, a point of reference and a masterpiece for all lovers.
