La Dama

La Dama is a winery located in San Vito di Negrar, in the heart of Valpolicella Classica, whose estate extends over approximately 16 hectares of land diversified between vineyards, olive groves, and unspoiled woods. Here, since 2006, the wine adventure of Gabriele Dalcanale has taken place, who, driven by his love for vineyard cultivation and wine production, has entered the world of wine as a producer, alongside his wife Miriam and his father-in-law Giampietro. His vineyards cover 10 hectares and are divided into two separate farms, from Negrar to Sant’Ambrogio, trained on trellises and in the typical shape of the Veronese pergola, with posts supporting a slightly slanted framework. This traditional training method protects the grapes thanks to the shade created by the leaf canopy of the vines above, expressing itself in the clusters in the form of aromatic finesse.

its wine proposal, namely the Amarone della Valpolicella Classica, whose grapes are left in ventilated rooms called “fruttai” for more than three months before processing in the winery. Here, during the production processes, the team at La Dama manages to extract from its indigenous grapes the distinctive organoleptic characteristics of each variety: Corvina lends elegance, Rondinella and Corvinone provide pleasant floral notes, and Molinara imparts sapidity.

The vineyards of La Dama have been certified organic since 2015 and, based on the location of the lands, produce different clusters for every use: in the municipality of Negrar, there are vines of different ages that give the grapes both young and mature characteristics, making them complementary in the winemaking processes, while in the municipality of Sant’Ambrogio, the vines are caressed by the sun and facing Lake Garda, an exposure that is the main basis for obtaining clusters of excellence, the raw material for the noble Amarone.
