Mas de la Sabatera
Mas de la Sabatera is a small family-run business in the Conca de Barberà, a picturesque valley in Catalonia. The origins of the “Mas” date back to the 15th century, when a farming community was established. After a long period of abandonment in the 20th century, today this place has come back to life thanks to Xavi and his son Edu Pallarés, who decided to restore value to the family vineyards and the history surrounding them. Thus, a path for recovering the best plots has taken shape. Mas de la Sabatera is first and foremost a story of roots, of return, and of respect for a centuries-old agricultural heritage.
In the vineyard and in the winery, the work follows a philosophy of minimal intervention, made up of concrete and daily gestures. The grapes come exclusively from the vineyards surrounding the Mas and are cultivated with great attention to the natural balance of the ecosystem. Here, technology is not seen as an end, but as a simple tool to enhance a artisanal, conscious viticulture that is deeply linked to the natural rhythm of the seasons. The harvest is manual, in the winery the fermentations are spontaneous, and the general approach avoids any invasive practices: all to accompany the wine on its journey.
