Nau Mai consists of 15 hectares of vineyards, from which it produces an annual output of about 60,000 bottles. The vines are rooted in sandy and clayey soils and enjoy a cool oceanic climate characterized by significant daily temperature fluctuations, ideal conditions for the cultivation of white grape varieties.

Indeed, these climatic conditions lead to a significant accumulation of acids and aromatic precursors in the grapes, compounds that take on particular importance when discussing white wines. Conventional agriculture is practiced with respect for the environment.
