Ninfa

Ninfa is a Mexican distillery specializing in the production of raicilla of extraordinary quality and purity using accurate traditional techniques. Like tequila and mezcal, raicilla is a spirit made from the agave plant, using exclusively the heart, which is particularly rich in sugars. This spirit, which boasts over 300 years of tradition, is protected by a Denomination of Origin. The Ninfa distillery, passionately run on a strictly family level, is located in the State of Chihuahua, at the foot of the Sierra Madre Occidental mountain range, among the mountains of San Sebastian del Oeste. This small mining village dating back to the 16th century continues with perseverance in the production of traditional liquors, passed down from generation to generation. Today, Marcos Galindo is the owner and Maestro Raicillero of Ninfa, who has embraced the long-standing tradition of the family, whose roots actually predate the Spanish domination of the Sierra Madre Occidental. Along with a team of botanists, the family Galindo studies and preserves the local heritage of indigenous agave.

The raicilla of Ninfa is made from Maximilliana agave grown in sustainable agriculture and harvested exclusively at full ripeness. Only the heart of the plant is used, called piña due to its characteristic shape resembling a pineapple, which is cooked for 24-72 hours in a wood-fired oven using local oak. After grinding, aimed at extracting the sugary juice contained within the piña, the process continues with alcoholic fermentation in oak vats, followed by double distillation of the fermented mash in copper Pot Still stills.

The very limited production of the Ninfa distillery manages to condense in the raicilla the passion and long experience of the Galindo family in the production of this traditional spirit, characterized by its floral, citrus, and delicately herbal aromas.
