De Moor Olivier e Alice

The Burgundy wine reality of De Moor Olivier and Alice is committed to showing "the other face" of Chablis, a craft and genuine face aimed at enhancing Aligoté. The winery is located in the small village of Courgis, just a few kilometers southwest of Chablis and included in the namesake AOC. Here, the couple Olivier and Alice De Moor began their winemaking activity in 1989 with the planting of three small parcels, followed by the first harvest in 1994, while in 2005 the couple converted the vineyards to organic farming. Olivier and Alice, he a native of Courgis and she originally from Jura, both graduated enologists from the school in Dijon, met while working at a large estate in the Chablis area. At their Domaine, Alice takes care of the oenological aspect while Olivier is responsible for the vineyards, although the two help each other. The small cellar where the wines age is located just below the house where Olivier's grandparents lived.

The soils are predominantly clayey and calcareous, dating back to the Kimmeridgian geological layer, characterized by an abundant presence of marine fossils. When the grapes have reached full ripeness, manual harvesting of the clusters takes place, which are then processed according to craft and minimal oenological practices. In this perspective, fermentations occur entirely spontaneously in oak barrels, followed by aging in used oak barrels, with a perfectly measured use of wood. Furthermore, throughout the entire process, clarification or filtration operations are excluded.
