Tombolini Oreste
Oreste Tombolini is a unique winemaker, one of the brightest and most authentic personalities of Puglian wine. His winery is located in Carosino, in that part of the province of Taranto already included in the Salento territory. After more than forty years of service in the Navy, Oreste retired with the rank of rear admiral, deciding to dedicate himself to the Primitivo vineyards inherited from his grandfather. His production style, original and unconventional, is the result of years of experimentation and a life choice based on discipline and moral integrity.
Oreste Tombolini owns about 15 hectares of vineyard, consisting of old bush-trained vines and managed according to a strict protocol based on rigorous agricultural techniques defined as 'ethical-natural', inspired by the studies of two Japanese scientists, Teruo Higa and Masanobu Fukuoka. The aim of these rules is to achieve and maintain a state of biochemical balance in the soil and enhance the immune system of the plants. In this way, a a reduced harvest in quantitative terms, but endowed with an intense aromatic charge and a significant richness of polyphenols. In the winery, the production protocol provides for a rich presence of Effective Microorganisms of Teruo Higa in the premises, temperature control during fermentation, and aging in barriques with music therapy. In the barrel room, a stereo system has been installed that plays a selection of pieces by Mozart and Pergolesi and Gregorian chants.
The wines of Oreste Tombolini are intense, deep, and important wines, authentic children of the land from which they come. The entire production is based on the search for harmony in wine, understood as a living natural element full of energy.
