Paul Clouet

The Paul Clouet house is a small reality of Récoltant-manipulant (RM), producing excellent Champagne in Bouzy, one of the most famous Grand Crus of the Montagne de Reims area, historically a prime area for Pinot Noir. The domaine was founded in 1907 by Paul Clouet and is now managed by his granddaughter Marie-Thérèse Bonnaire with the help of her two sons, Jean-Etienne and Jean-Emmanuel. For over a century, the family has cultivated vineyards in this magnificent territory, leveraging a savoir-faire passed down from generation to generation and benefiting from very suitable soils and a perfect microclimate for black grape varieties, which in this area reach levels of absolute excellence.

Thanks to these favorable conditions, the Maison is able to guarantee a high-level production that perfectly expresses the characteristics of the place. The estate covers a total of a few hectares, composed of numerous small parcels, carefully selected over time, favoring the best exposures. The small size of the company allow for meticulous attention to be paid to all stages of vineyard work and the subsequent steps in the cellar, from winter pruning to the final dégorgement of the Champagne. A care that only small vignerons can ensure and that still guarantees today the possibility of tasting great Champagnes with a typically artisanal face.

The grapes used for the production of the Champagnes come from owned vineyards. Pinot Noir is cultivated in the municipal territory of the Grand Cru of Bouzy, while Chardonnay is grown in the Gran Cru area of Chouilly. The vines are managed with extreme care and the clusters are harvested at perfect ripeness. Very soft pressings allow for the use of only the free-run juice. The grapes from each parcel are vinified separately and only later is the blending of the vins clairs done to create the final cuvées. As per the tradition of the area, Paul Clouet Champagnes are characterized by a significant presence of Pinot Noir, which gives the wines structure, power, elegance, and freshness. Among the cuvées, the Blanc de Noirs stand out particularly.
