Pazo Senorans
Through the union of tradition and innovation, the Galician winery Pazo Señorans aims to offer unique white wines from Albariño grapes, which are intended to be a faithful representation of the land from which they descend. Pursuing this vision, Pazo Señorans vinifies this indigenous white grape variety according to numerous diversified styles, thus revealing all its facets. The bodega was founded in 1989 within the province of Pontevedra, in Rias Baixas, when the couple Marisol Bueno and Javier Mareque decided to renovate a charming 16th-century Galician country house that already produced grapes. In fact, the Spanish term “pazo” identifies an ancient noble house characteristic of Galicia, especially those located in the countryside. Today, the winery is led by the children Marisol, Vicky, Javier, and Santiago, who passionately and enthusiastically nurture the winemaking tradition of the place.
All the hectares available to Pazo Señorans are dedicated to Albariño, a grape varietythat benefits from the typically oceanic climate, quite humid, rainy, and cool, as well as from the poor sandy soils and the subsoil rich in xabre, a granite rock with formidable draining capacity. Agronomic operations are carried out with scrupulous care, and once they reach maturity, the clusters are hand-picked with careful selection, in order to work solely with the healthiest and ripest grapes. In the winery, fermentations mostly take place in temperature-controlled stainless steel tanks, while aging is done in steel or oak barrels, but always on the fine lees.
Pazo Señorans offers different versions of Albariño, from the more accessible labels, ideal for drinking young, to the fine whites destined for long aging, even passing through a sweet late harvest wine. The Pazo is also dedicated to distillation, carried out according to traditional Galician methods in copper stills, using the exhausted pomace of Albariño.
