Picaflor
Picaflor Mezcal is a brand born from the initiative of some Mexican importers of quality distillates, who decided to enhance the production of Mezcal from some small artisanal distilleries in the Mexican region of Oaxaca. The name chosen for the new company is closely linked to the distillate. In Mexican, the word Picaflor refers to the hummingbird, which is particularly fond of agave syrup. The company was established in 2012 and began selecting partners to work with among small producers, who still follow the oldest traditions of the area, remaining faithful to a savoir-faire passed down through the centuries and linked to the patient cultivation of agave and the subsequent processing of the raw material, until reaching the final distillate.
Mezcal is one of the most well-known products of Mexico, alongside Tequila. In reality, the two distillates are very similar. They differ mainly in the production area and the use of blue agave variety for the production of Tequila.The production of Mezcal begins with the selection of adult agave of the most prized varieties, which has reached 8-10 years of age, in order to offer a rich sugary component and good aromaticity. The processing involves cutting all the leaves to obtain only the heart of the plant, the precious piña. The piña is then slowly cooked in special brick or stone ovens, often underground, and then crushed and shredded. After a maceration and fermentation of several weeks, the precious agave juice is obtained, particularly intense and rich in scents and aromas.
The distillation phase is carried out traditionally, using discontinuous copper stills. The small artisanal distilleries manage this process with great skill, to preserve maximum finesse. Usually, the process occurs with two successive steps, in order to obtain a Mezcal around 60% vol at the end of the production cycle.
